Weird & Mundane Progress

Weird progress report on the cipro front.

I’ve been cooking all morning… Literally without sitting down. That’s a HUGE change for me.

On my good days before, any work required a *lot* of breaks between steps.

Today, I put the groceries away and immediately got into doing the ridiculous prep work for Porter’s lunches this week.

I saw a description on a restaurant menu and decided that he had to have it, so it’s totally my own fault, there’s just a LOT of pieces here:

Roasted sweet potato, broccolini, and Brussels sprouts
Spicy roasted chickpeas
Crispy kale
Fried halloumi

Not pictured, as they’re for adding after it’s reheated:

Jalapeno cauliflower hummus
Maple tahini drizzle.

Then – after I got all that cooked, assembled, and put away, I IMMEDIATELY made lunch.

Lunch was kind of a bastardized mix of two dishes, with kale thrown in for the hell of it.

I saw a TikTok yesterday where someone prepared soft tofu like this, so it “bloomed like a flower” when broth was poured over it.

Cool, but not really a full lunch, so I decided to throw together a bit of a kimchi soup for it.

I broke the tofu squares when taking them out of the broth ๐Ÿ™

Still, fun texture and tasty.

It’s such a dumb little victory, but this is WORLDS away from just a month or two ago when any cooking had to be done 10-15 minutes at a time, with long breaks between steps.

Hey, I'm Marie!

I started back in early 2019, and ran into dual roadblocks in 2020 - the pandemic, and being severely crippled by FOUR PILLS of Ciprofloxacin - an antibiotic that destroyed most of the tendons in both of my feet.

Oh, and pancreatic cancer. Fun stuff.

I've learned to walk again, and in October 2021, I started back. Again.
